Spray and then line a jelly roll pan (17 x 13 is best) with foil.

Cover the pan with one layer of rectangles of

        Club Crackers.

In a sauce pan boil until frothy:

1 stick butter

1 stick margarine

3/4 C. sugar

1 teaspoon vanilla

Pour over top of crackers.  

Sprinkle sliced or slivered almonds (about 1 C.) over the top.

Bake at 350 8-12 min. until brown (make sure it’s brown)

The mixture will bubble again in the oven.  

Let cool and break into pieces.

Hi Sue, I made the almond snackers and they turned out really good considering I forgot to put in the vanilla.  I had them in the oven about 20 minutes before they were brown.  a little hard getting off the foil but I only had to eat a few that were broken, ha-ha.  Thanks for sharing.  Judy Poterack

Hi Sue, I just tried your almond snackers with a bit of variation.  Instead of the butter and margarine, I used Land O Lakes Spreadable Butter with Canola Oil.  I also used Splenda instead of sugar due to diabetics in my family.  I think I got a little carried away with the almonds, but I really like them.  I'm anxious to try it the right way, but I used what I had in the house at the time.  All in all, they task very good, and it's hard to stop eating them.  Thanks a lot for the recipe, and I look forward to seeing you at the picnic.  Carolyn (George) Hibbs.

 Thanks for sharing your variations.  I'm on a slow, but hopefully steady, campaign to lose weight (a stealth diet?), so I intend to try your suggestions, although not too often.  Did the spreadable butter and oil still caramelize when heated?  Not sure that you can use too many almonds....     Yes, see you at the picnic.    Sue

Good luck on your weight loss.  You are very smart to take it slow.  I lost 40 lbs. a few years ago, took it off slowly and have been able to keep it off.  I wouldn't exactly say that the mixture carmelized, but I didn't let it bubble too long.  I also didn't have aluminum foil, so I just sprayed the cookie sheet with cooking spray and it came right off the pan.  See you soon.  Carolyn
